Alfajores (Dulce de Leche Sandwich Cookies)

Preheat oven to 350°F and line baking sheets with parchment paper.

Whisk flour, cornstarch, and baking powder in a bowl.

In a separate bowl, cream the butter and 1/2 cup powdered sugar until light and fluffy.

Gradually mix the dry ingredients into the butter mixture until a soft dough forms.

Roll the dough to 1/4 inch thickness and cut into 2-inch rounds.

Place the rounds on the baking sheets and bake 10-12 minutes until set but not browned; cool completely.

Spread dulce de leche on the flat side of half the cookies and sandwich with the remaining cookies.

Dust the assembled cookies with the remaining powdered sugar before serving.
