Unopened gelatin powder keeps indefinitely in a cool, dry pantry. Once prepared and set, store covered gelatin in the fridge for up to 7 days. Freezing is not recommended as it damages the gel texture.
Cooking Tips
For best results, use hot (not boiling) water to dissolve the powder—boiling can damage gelatin's setting ability.
If adding fruit, use fresh fruit sparingly and add after the gelatin has partially set, as acidic fruits (pineapple, kiwi) can prevent setting.
Chill for at least 4 hours (or overnight) for a fully set, jiggly texture.
To speed up setting, use ice water instead of room-temperature water, but dissolve the powder in hot water first.
Common Mistakes
Using boiling water or very hot water, which can break down the gelatin proteins.
Not waiting long enough for the gelatin to fully set before unmolding or serving.
Adding fresh pineapple or papaya, which contain enzymes that prevent gelatin from setting properly.
Overfilling molds or containers—gelatin needs room to gel evenly.
