Store raw roast beef on the lowest shelf of the fridge to prevent drips onto other foods. Cooked roast beef should be refrigerated within 2 hours of cooking. Slice and wrap tightly before freezing for easier portioning.
Cooking Tips
Remove roast beef from the fridge 30–40 minutes before roasting for more even cooking.
Use a meat thermometer to avoid overcooking: aim for 125°F (52°C) for rare, 135°F (57°C) for medium-rare.
Let cooked roast beef rest for 10–15 minutes before slicing to retain juices.
Season generously with salt and pepper at least 24 hours ahead, or right before roasting—avoid the in-between window.
