Don't refrigerate until fully ripe—cold slows ripening and dulls flavor. Canned or jarred plum tomatoes last 1–2 years in a cool pantry.

Cooking Tips
Blanch and peel them easily: score the bottom with an X, drop in boiling water for 30 seconds, then ice-water bath.
For sauce: halve lengthwise, scoop out seeds and excess liquid to reduce cooking time and concentrate flavor.
Choose tomatoes that feel heavy for their size—dense flesh means more flavor and less water.

Common Mistakes
