Casings are often sold packed in salt or brine. If dry, store in a cool, dry place. If rehydrating, use within a few days.
Cooking Tips
Soak dried hog casings in cold water for at least 30 minutes (or according to package directions) to rehydrate and remove salt before use.
Gently rinse the inside of the casing with cool water to ensure it's clean and to check for any holes.
Stuff casings evenly, leaving a little room for expansion. Tie off ends with butcher's twine or by twisting the casing.
Prick any air bubbles with a small needle to prevent sausages from bursting during cooking.
Common Mistakes
Not soaking casings long enough, leading to a tough or chewy texture.
Overstuffing the casings, which can cause them to burst during cooking.
Forgetting to prick air pockets, potentially leading to uneven cooking or bursting.
