Store raw turkey on the lowest shelf of the fridge to prevent drips onto other foods. Thaw frozen turkey in the refrigerator (allow ~24 hours per 5 lbs). Do not thaw at room temperature.
Cooking Tips
Turkey breast is very lean; brine or marinate before roasting to prevent dryness.
Ground turkey works well in place of ground chicken or beef in most recipes; cook until internal temp reaches 165°F.
Dark meat (thighs, drumsticks) stays moister and more flavorful than white meat when cooked.
Let roasted turkey rest for 15–20 minutes before carving to redistribute juices.
Common Mistakes
Overcooking turkey breast, which makes it tough and dry. Use a meat thermometer (target 165°F internal temperature).
Skipping the brine step, especially for whole birds.
Not patting the skin dry before roasting, which prevents browning.
