Keep frozen until ready to use. Most store-bought shells are sold frozen and should remain in the freezer. Once baked, store in an airtight container at room temperature for 1–2 days; they soften over time.
Cooking Tips
Do not thaw before baking—bake straight from frozen according to package directions (usually 15–20 minutes at 400°F/200°C).
For crispier shells, brush the inside lightly with egg white before baking.
Fill shells just before serving to keep them crispy; soggy fillings will soften the pastry.
You can use a small spoon or melon baller to gently remove any excess puffed dough from the inside if needed.
Common Mistakes
Thawing shells before baking—they lose their structure and won't puff evenly.
Filling shells too early—moisture from fillings will make them soggy.
Overbaking—watch carefully as they can brown quickly and become bitter.
Using overly wet fillings (e.g., custard, fruit compote) without a protective layer like chocolate or a thin pastry cream barrier.
