Keep frozen until ready to use. Thaw in the refrigerator for 30–60 minutes before unfolding. Once thawed, use within 1 day. Do not refreeze after thawing.
Cooking Tips
Keep the dough as cold as possible—warm dough won't puff properly. Work quickly and chill it between steps if needed.
Brush with egg wash (beaten egg + splash of water) before baking for a deep golden color.
Prick the surface with a fork if you want it to puff but stay relatively flat; leave unprickled for maximum rise.
Bake at the temperature and time specified on the package—usually 400–425°F for 15–20 minutes.
Use a sharp knife or pizza cutter for clean cuts; a dull blade can compress the layers and prevent puffing.
Common Mistakes
Using the dough straight from the freezer without thawing—it won't unfold or puff evenly.
Handling the dough too much or letting it get warm, which melts the butter layers and ruins the pastry.
Overfilling with savory or sweet fillings, which weighs down the dough and prevents rising.
Opening the oven door too early, which causes the pastry to collapse.
Forgetting to chill the assembled pastries before baking, leading to spreading and poor puff.
