Store in the refrigerator in an airtight container or its original packaging. Miso keeps for several months to over a year in the fridge. It can freeze indefinitely but may change texture slightly. Avoid temperature fluctuations.
Cooking Tips
Dissolve miso in a small amount of warm (not boiling) water or broth before adding to soups or dressings to avoid lumps and preserve beneficial enzymes.
Different colors (white, red, dark) have different flavor intensities—white is milder and slightly sweet, red is medium, and dark/hatcho is strong and salty.
Add miso toward the end of cooking to preserve its complex flavors.
Start with less than you think you need; you can always add more but can't remove it.
Common Mistakes
Boiling miso destroys its beneficial probiotics and mutes its flavor.
Using miso straight from the container without diluting it first can create lumps or uneven seasoning.
Confusing miso varieties and using dark miso where a lighter, sweeter paste is needed (or vice versa).
