Unopened cans are shelf-stable for 12+ months in a cool, dry pantry. Once opened, transfer to an airtight container and refrigerate. Freezing is not recommended as it can cause separation.
Cooking Tips
Shake the can well before opening, as some separation may occur during storage
To make a milk substitute, dilute evaporated milk with equal parts water (1:1 ratio)
Use straight from the can in coffee for extra creaminess without adding separate cream
Add to soups, sauces, and casseroles for richness without the extra liquid of regular milk
Common Mistakes
Confusing evaporated milk with sweetened condensed milk—evaporated milk has no added sugar and they are not interchangeable
Not shaking the can before use, resulting in thin liquid on top and thick cream at the bottom
Using it past 5 days after opening, when it can develop off-flavors or spoil
