Freshly made dashi is best used within a few days. It can be frozen in ice cube trays for convenient portioning.
Cooking Tips
For a vegetarian/vegan dashi, omit the bonito flakes and use only kombu, shiitake mushrooms, and dried sardines (niboshi) if desired.
Don't boil kombu for too long, as it can develop a slimy texture and bitter taste.
Katsuobushi (bonito flakes) are essential for traditional dashi. Their smoky, fishy aroma is key.
Experiment with different ratios of kombu to katsuobushi to find your preferred flavor intensity.

Common Mistakes
Boiling the kombu: This extracts bitter compounds. Heat gently until just before boiling.
